We started a day with a wonderful breakfast at Roma Santa. We ate sausage, omelets, yogurt, and cereal.

We drove to a Quinoa Factory in the Chimborazo province and we learned about the Quinoa exportation process as well as the recent rise in demand for quinoa. We toured the quinoa fields and took some pretty great pictures. We toured the factory and saw how how the quinoa is picked, processed, packed, and exported.

We drove back to Roma Santa for a lunch of chicken, potatoes, rice, and salad. After that we headed back to the hotel. We presented the Community Action Projects we designed (Mia did an amazing job translating everything). The people at Utopia saw our plans for the bodega, kitchen, and office. They were all approved! Tomorrow we will shop for our projects and start working on Wednesday.

Soon after that, we had English tutoring and we did a great job with our lesson plans and keeping the attention of our kids. We had another great dinner at Roma Santa and ended the day with a nightly meeting.
